2 pcs trout 4 butter 1 pcs lime to taste salt, ground black pepper 150 ml white wine 3 tbsp almond chips 1 tbsp herbs
procedure
1. Clean the trout, wash and dry. Season them with salt and pepper on the inside. Drizzle with lime juice and make indentations on the outside. Place them in a baking dish that has been greased with butter, place the butter slices on top and bake at 180°C for about 20 minutes. 2. While the fish is baking in the oven, toast the almond chips on both sides in a dry frying pan. Add the wine and simmer until the wine reduces a little. Season the sauce with herbs and set aside. 3. Serve the baked trout with the almond-wine sauce.
