Trout fillets stuffed with spinach and cheese, lemon sauce, potato puree

A very interesting and refreshing combination of spinach with ricotta and trout, which is complemented by mashed potatoes. The concert of flavours, dominated by spinach and cheese, will certainly be perfectly complemented by a truly royal wine – Riesling 2012 late harvest from the Chateau Bzenec Terroir Collection winery.

Procedure:
1. 1. Sauté chopped shallots in a drizzle of olive oil and butter until glassy, add a crushed garlic clove, sauté briefly and add fresh chopped spinach (or thawed leaves, stripped of excess water), season with salt and pepper, remove from heat and add Ricotta
3. Fill the fillets with the prepared mixture, wrap them like a roll and secure with a toothpick
4. Place the rolls on a pan and put them in a preheated oven at 180 degrees for about 12 minutes
5. In the meantime, boil the peeled potatoes, drain them and put them in the base prepared from finely chopped celery stalks fried in olive oil
6. Transfer the fish rolls to a warm plate, put the pan with the fish stock on the fire, sprinkle with lemon, grate a little citrus zest, pour about 1 dl of cream and a tablespoon of butter and boil the sauce to the desired thickness
8. Serve 2 rolls of trout on a warm plate, drizzled with lemon sauce and topped with mashed potatoes.
