Třeboňská fish soup with peas

Old recipe of Třeboň fishermen from the beginning of the 20th century. It is a soup prepared from carp trimmings, soaked peas, Vegetable Recipes and spices, served with croutons toasted dry in a pan.

Ingredients:

carp trimmings (head, fins, part of tail) 250 g cooked peas 2 pcs garlic cloves 2 pcs mushrooms 1 pcs piece of celery 1 pc carrots 1.5 l water + water to cook peas pea leaf new spices ground pepper whole pepper parsley butter salt

Procedure:

1. Boil the peas the day before until soft
2. Pour 1.5 l of water over the head, trimmings, tail, add root Vegetable Recipes, allspice, bay leaf, whole peppercorns, salt, cook for 45 minutes
3. Drain the broth, dice the meat, return it to the broth, also the chopped Vegetable Recipes
4. Drain the peas, sieve through a sieve or grind in a food processor, add to the fish broth to thicken it
