Trdelníky z jižní Moravy

This is a sweet dough speciality from Slovácko. Its production has a long tradition and today it belongs among our protected gastronomic gems.
Ingredients:
Procedure:
1. Make a smooth, not too stiff dough
2. Roll out the dough into long rolls, press them flat and roll them on greased wooden rollers called “trdlo” like a tube
3. The rolls are allowed to rise again, brushed with beaten egg, sprinkled with chopped nuts and baked on a special four-legged iron stove over hot charcoal
4. The golden rolls are removed from the roller and sugared
6. They are served cut into larger rounds or rings and make an excellent dessert with wine.

Note:
Trdlo also tlouk – Old Czech for a mallet used to turn the dough before baking. Trdlo was continually brushed and trdelník was diligently brushed with beaten egg yolk. Also a mallet for grinding food or spices.
