Traditional Czech doughnuts

1/2 kg semi-coarse flour 6 pcs egg yolk 3 tbsp sugar 30 g yeast 1/4 liter milk 60 g butter 2 tbsp rum to taste lemon zest, vanilla, salt, frying fat

Salt the flour, add the zest and vanilla. In a water bath, beat the egg yolks with the sugar to foam. Make a sourdough starter with half the milk, yeast and sugar. Mix the egg yolk foam with the sourdough, add the butter, rum and flour. Immediately roll out the dough and roll out the doughnuts. Leave them to rise. When they rise, turn them over a few times. Once risen, fry them.
