Tomatoes stuffed with eggs

3 pcs tomatoes large 3 pcs egg 50 g mozzarella (grated) salt, pepper black ground (to taste) basil fresh/dried olive oil to grease the mould

How to spice up breakfast? Just fill them with mozzarella and eggs and bake them briefly in the oven.

Wash the tomatoes and cut off the top.

Use a spoon to scoop out the inside and set aside.

Salt the inside and turn them over to drain the juices.

Cut the hollowed out mixture finely, mix with the grated mozzarella, season with salt and pepper and fill the tomatoes halfway.

Place them in a baking dish greased with oil. Crack an egg into each, sprinkle with salt and dried basil and cover the top.

Place in an oven preheated to 200 °C. Bake for about 10 minutes. Serve for breakfast with wholemeal bread. Enjoy!
