Tomatoes stuffed with couscous

ingredients

2 pcs tomato 80 g couscous 150 ml vegetable broth 1 tbsp lemon juice 2 cloves garlic 1 tbsp fresh basil 50 g Feta cheese a little olive oil

procedure

1. Put the couscous in a bowl, pour the boiling vegetable stock over it, cover and leave to rest for 15 minutes. Stir the couscous lightly with a fork. 2. Add the olive oil, diced cheese, chopped basil, crushed garlic and lemon juice. 3. Wash the tomatoes thoroughly, cut the tops and fill them with couscous. Cover them with the top, leave to cool and serve.
