Tomatoes for Brains

Simple and quick dinner. The recipe is from our reader Mrs. Maruš.

Ingredients:

2 pcs large tomatoes 1 pcs medium onion 1 pc garlic cloves 2 pcs eggs oil under onion ground pepper salt

Procedure:

1. Cover the tomatoes with boiling water and leave them in it for about 1 minute, then peel and dice them
2. Chop the onion finely and let it brown in the oil, add the diced tomatoes and sauté for a while, then add the garlic rubbed with salt and crack the eggs, letting them stir to harden

Recommendation:

Serve with bread or dark bread.

Note:

P.S from Mrs. Marus – I make the same way with radish brains, or young kohlrabi, but we have to grate them beforehand and roast them a little longer than tomatoes. I make cauliflower marrow from pre-cooked and mashed cauliflower. It can also be made raw, then you can make the cauliflower a little crispier, it depends on taste.
