Tomato soup with basil

1 kg tomatoes 400 ml tomato puree 2 tbsp olive oil 3 pcs shallots 4 cloves garlic 1 pcs celery stalk 3 pcs bay leaves 6 stems thyme 500 ml vegetable broth 150 ml sweet cream 2 tbsp cane sugar a little basil
step
1. In a large saucepan, fry the finely chopped onion, garlic and celery in hot oil. Add the finely chopped tomatoes, tomato puree and stock. Boil everything thoroughly together with the bay leaf. Remove and blend the soup with an immersion blender, season with pepper, sugar and cream. 2. Serve the finished soup garnished with basil.
