Tomato-Orange Soup

Exotic soup full of flavors and aromas of the ingredients used.

Ingredients:

1 kg of tomatoes 60 g of butter 5 tbsp of tomato puree 1 l /td>

strips of garlic 2 pcs bean leaves 2 pcs cloves 1 pcs whole cinnamon 1 pc onions several black peppercorns cream to taste basil water salt

Procedure:

1. Under cold running water, rinse the tomatoes and slice them crosswise on the top, then place them in boiling water and steam for about 2 minutes, after pulling them out, immediately place them in ice water or directly into ice, peel them after cooling
2. In a pot, fry the peeled, finely chopped onion in butter, add sliced garlic cloves, puree, peeled, quartered tomatoes, stir, after a while add chopped basil and pour 1 l of chicken broth over the ingredients in the pot, let everything simmer
3. Pour 1 litre of orange juice into the pan, add cloves, bay leaves, cinnamon and pepper, cook until the contents are reduced by half
4. Remove all the spices from the juice and pour the reduction into the soup, season with salt and pepper and simmer for a while
