Tomato muffins

1 kg boiled potatoes 400 g cherry pardajky 2 cloves garlic 1 pinch nutmeg 1 pk egg 100 g semi-coarse flour 1 tbsp baking powder 1 handful fresh basil to taste salt, ground black pepper 50 g parmesan
step
1. Drain the cooked potatoes, mash and leave to cool. Cut the tomatoes into smaller pieces. 2. Stir salt, pepper, nutmeg, crushed garlic, egg, flour, baking powder and chopped basil into the cooled potato mixture. Make a smooth dough with this mixture and finally stir in the tomatoes. 3. Line a baking tray with muffin cups, fill them with the batter, sprinkle with Parmesan cheese and place in the preheated oven. Bake the muffins at 200°C for about 25 minutes until golden.
