Tomato chutney
Chutney is a hot and sweet jam. It’s great with barbecue or curries made in winter. It’s worth making a big batch at once and enjoying it.
Ingredients (approx.5dl)
2 teaspoons of crushed tomatoes 1 teaspoon of mango or apple 1 onion 2-5 red chillies (depending on taste and spiciness) 1 tablespoon of fresh, grated ginger1 tsp salt 1 tsp black pepper 2 dl cane sugar 1.5 dl white wine vinegar
Peel and chop the onions. Slice the chillies.
Combine the tomato paste, mango, onions and chilli in a large saucepan. Add spices, sugar and vinegar. Bring the mixture to the boil and continue to simmer gently for about 45 minutes until the mixture thickens. Be sure to stir well.
Pour the hot chutney into clean, heated glass jars, pour over the surface of the piri and cover with a lid. The chutney can be kept in the fridge for several weeks.
