Toasted salmon
ingredients
2 tbsp lemon juice 2 tbsp olive oil 1/2 tsp salt 1/2 tsp ground black pepper 3 pcs salmon fillets a little fat for greasing

In a small bowl, whisk together the lemon juice, oil and 1/4 tsp salt and pepper

Sprinkle the remaining salt and pepper on both sides of the salmon. In a non-stick frying pan, heat the fat over medium heat. Place the salmon in the pan and sear until the skin is golden and the fish can be easily removed from the pan (about 4 min). Carefully turn it over with a spatula and sear for a further 3 min

Cut each fillet into 4 pieces and place 3 pieces on each plate. Drizzle the fish with the reserved lemon dressing.
