400 g long biscuits 400 g Mascarpone 4 pcs eggs 100 g granulated sugar 1 cup instant coffee (or small espresso) cocoa for sprinkling

1.
Separate the egg whites from the yolks. Whisk the egg yolks with the sugar over steam until you have a foamy cream. Remove from steam and add mascarpone. Stir gently.
2.
Beat the egg whites and slowly add to the first mixture.
3.
Dip the biscuits on one side in the coffee and place in the bottom of the bowl. Cover with a layer of cream and repeat the process.
4.
Sprinkle with cocoa powder and refrigerate.
