This year the Three Kings parades in Spain may not be as crowded as usual, but that will not prevent other traditions of this special day, especially those that leave us sweeter taste.
Do you have a craving for a “roscón de Reyes” but you don’t feel like kneading it? You don’t feel like eating that “roscón” you’ve been seeing (the same one) in the supermarket since last year and at this point you may need a saw to slice it? If so, you’re in the right place, because what we propose is an alternative to the traditional roscón de Reyes that is very easy to make, it looks good, it’s good and since we get to it until we can sink our teeth into it we don’t have to wait, if I’m careless, not even half an hour.
And it’s not going to be just any kind of roscón, but in that half hour, it will give us time to make our quick and easy roscón into a filled roscón. In this case, to get rid of the nougat that has been left over from Christmas and that, if not given out soon, would be doomed to go stale lost in some cupboard.
So, let’s turn on the oven to 200 ºC to start and get down to work, you’re going to take less you to make the recipe than me to tell it.
Puff pastry pastry filled with nougat cream
Ingredients
Ingredients
For the roscón
Puff pastry, 1 sheet Egg yolk, 1 Sugar, 1 teaspoon Filleted and/or granulated almonds, candied orange, cherries…
For the filling
Soft nougat, 100 g Whipping cream, 200 ml Sugar, 1 tablespoon Egg whites, 1 (optional) Neutral gelatin, 3 sheetsFor the filling
Soft nougat, 100 g Whipping cream, 200 ml Sugar, 1 tablespoon Egg whites, 1 (optional) Neutral gelatin, 3 leaves
Step 1
Hydrate the gelatin in a bowl with cold water and turn on the oven at 200 ºC.
Step 2
Puff pastry
Stretch the puff pastry sheet well and cut two rings (I have done it with a dessert plate and a small glass). With the leftover puff pastry I have made more circles to make some mini pizzas whose recipe you can see by clicking here.
Step 3
Place the puff pastry rings on a tray lined with baking paper.
Step 4
Mix the tablespoon of sugar with the egg yolk and brush the puff pastry with the mixture.
Step 5
Decorate one of the puff pastry portions with slivered almonds, cherries, candied orange or whatever you have on hand. In the last case, a couple of tablespoons of sugar moistened with half a teaspoon of water will get us out of trouble (we only have to decorate one of the rings because it will be the one we will use as a lid).
Step 6
Bake for 20 minutes at 200 ºC and when they are well browned put them to cool on a wire rack (they will cool immediately).
Step 7
While the puff pastry is in the oven, we take the opportunity to prepare the filling, for this we mix the nougat with 50 ml of cream. We whip 100 ml of cream with the spoonful of sugar and add it to the mixture.
Heat the remaining 50 ml of cream in the microwave for 15 seconds at 800 W and dissolve the drained gelatine in it. Add to the mixture and integrate.
Finally, add the whipped egg white, which will make the final texture lighter, like a mousse, although this step is optional.
Step 8
Let the mixture rest in the refrigerator until the cake is cold and when it is, fill it (at this time take the opportunity to hide the bean and the surprise wrapped in a piece of plastic wrap).
