If there is one thing that should not be missing in your freezer during the summer are clean and chopped bananas, as they are the key ingredient to prepare a lot of healthy ice cream in record time. In today’s recipe we make chocolate ice cream that besides being quick and made with healthy ingredients, it is also a vegan ice cream.

Ingredients

Frozen banana in chunks without skin, 1 kg Avocado, 1 of about 250-300 g Agave syrup, 25 g Unsweetened cocoa powder, 50 g Toasted pistachios, to decorate

In the bowl of a food processor such as a Thermomix or a blender with enough power to crush ice, put the peeled avocado without the stone, the frozen banana pieces, the agave syrup and the unsweetened cocoa powder.

Step 2

Triturate at high speed in batches of 30 seconds until we have a homogeneous and emulsified mixture that we can serve immediately with some chopped pistachios on top or we can leave it between thirty minutes and an hour in the freezer so that the ice cream takes a firmer consistency.

Notes

As this is a vegan ice cream, it is suitable for lactose intolerant people, as it does not contain any dairy products. Even so, thanks to the banana and avocado, the texture of the ice cream is as creamy as that of a cream-based ice cream.
