Ingredients:
1 lb chicken gizzards and hearts
1 onion, diced
1 green bell pepper, diced
4 cloves garlic, minced
2 tablespoons olive oil
2 cans black beans, drained and rinsed
1 can diced tomatoes
1 tablespoon chili powder
1 teaspoon smoked paprika
1 teaspoon cumin
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup chicken broth
3/4 cup BBQ sauce
Instructions:
In a large pressure cooker, sauté chicken gizzards and hearts, onion, bell pepper, and garlic in olive oil over medium heat until gizzards are browned. Add black beans, tomatoes, chili powder, smoked paprika, cumin, salt, and black pepper. Pour in chicken broth and BBQ sauce. Stir well.
Close and lock the lid. Select the high pressure cooking setting and set the timer for 30 minutes. When finished cooking, use the natural release method before opening the lid.
