Shed all preconceptions and taste the octopus! A truly amazing delicacy.

First we prepare the broth in which we cook the octopus.

Pour cold water into a large pot, add the sprigs of thyme, the halved head of garlic, bay leaf, whole black peppercorns and lemon quarters.

Bring to the boil.

Next, soak the octopus in the broth 3 times until it is finally simmered in the broth for about 1.5 hours.

Remove the octopus and pat dry. Slice so that only the tentacles remain.
6.
Heat the oil in a grill pan.
7.
Add the octopus (tentacles).
8.
Salt and pepper.
9.
Drizzle with lemon juice and chopped parsley.
10.
Serve immediately.
