Thai chicken soup TOM KHA

ingredients

2 tbsp vegetable oil 1 cup fresh mushrooms 1 pk chilli pepper 1 tbsp fresh ginger 1 litre chicken stock 1 can coconut milk 3 tbsp tom kha paste 1 tbsp fish sauce 1 tbsp oyster sauce 1 tbsp sugar 250 g frozen Vegetable Recipes for wok 2 pk chicken breasts 4 pk lime leaves

Heat the oil in a saucepan and fry the sliced fresh mushrooms in it

Add sliced fresh chillies and finely chopped fresh ginger and sauté.

Blend the mixture with chicken stock and coconut milk. Add tom kha paste, fish sauce, oyster sauce and sugar to taste.

Stir and bring to a boil.

Toss in wok vegetable mix (or other Asian vegetable mix), sliced chicken breast and lime leaves (or lime juice).

Bring to the boil and cook for 8 minutes or until the chicken breasts are done.

Serve with a slice of lime or even sprinkled with fresh coriander.
