Thai Chicken Skewers

Marinated meat cubes with pieces of peppers and onions skewered on skewers, brushed with oil and lime juice, grilled until tender.

Ingredients:

4 pieces of chicken thighs 1 piece 1 pk yellow peppers 1 pk onion 2 tbsp olive oil Juice of 1 lime salt For the marinade: 150 ml of coconut milk 1 tbsp red curry paste 1 tbsp chopped coriander

Procedure:

1. For the marinade, briefly fry the curry paste in a saucepan, pour half the coconut milk over it and bring it slowly to a simmer, add the finely chopped coriander, remove from heat, then stir in the remaining coconut milk and leave to cool
2. Bone the chicken thighs, wash, pat dry, cut into cubes, place in the prepared marinade, mix, cover with cling film and refrigerate for about 2 hours
3. Cut the washed peeled peppers and peeled onion into equal sized pieces, then skewer the Vegetable Recipes and meat alternately, lightly salt and brush the skewers with oil mixed with lime juice
4. Grill the skewers on a hot grill on all sides until tender and brush them several times during grilling with olive oil mixed with lime juice.
