This apple pie is suitable for weekday and weekend family gatherings. My grandmother used to make it when all of us granddaughters and grandchildren came to visit her or for holidays. My grandmother had apple trees in her garden that my grandfather had planted. As the apples started to fall from the apple trees at the end of August, my grandmother often baked us this apple pie and also made us homemade apple food. She also baked us this pie in the winter from stored apples. It is a memory for me of the beautiful childhood moments spent at grandma’s house. And when I bake a cake, I am happy to take it to my grandmother. She always asks me if I baked it and when I nod, she smiles and when she compliments me on how good it is, that’s the best reward for me.
1.
Stir the baking powder well into the flour, add the other ingredients and work into a smooth dough, divide into two loaves and refrigerate while you prepare the filling.
2.
Cut the apples, remove the cores and grate them.
3.
Roll out the pancake on a floured board, use a rolling pin to transfer it to a greased and floured baking tray ( I used a 36 x 26 cm baking tray, but it can be smaller).
4.
Distribute the grated apples evenly on the rolled out dough on the baking sheet, sprinkle them with granulated sugar, vanilla sugar, cinnamon and cover with the other rolled out dough.
5.
Brush with beaten egg, prick with a fork and bake for 20 minutes in a preheated oven at 250 degrees Celsius.
6.
Sprinkle the cooled pastry with icing sugar and cut into cubes or rectangles.
