First, use a knife to rub the beef tenderloin all over the tenderloin

Then add the mustard, ketchup, ground black pepper, finely chopped onion, Worcestershire sauce and egg yolk.

Stir the whole mixture very well to combine the flavours and let it rest for a few minutes.

In the meantime, prepare the gluten-free toast.

The toasts can be rubbed with garlic (as one likes), the steak tartare should be salted only when serving, so that it does not leak water.
