Tart with cheese and onions

100 g cold butter 200 g semi-coarse flour 1 pk egg yolk 1 pinch salt 2 tbsp cold water
Filling:
2 pcs onion 1 tbsp olive oil 150 g melted Bambino cheese 100 ml milk 3 pcs egg 3 pcs herbs 1/4 tsp ground nutmeg to taste salt, ground black pepper 6 Gouda cheese

1. Cut the butter into cubes, add it to the flour with the salt. Stir in the egg yolk, cold water and work the dough very quickly. Wrap it in cling film and put it in the fridge for an hour to firm up. 2. Clean the onion and cut it into rounds. Sauté in a tablespoon of oil and set aside. When the dough is cool enough to handle, set aside 1/4 of the dough and line a mould with the remaining dough. 3. In a bowl, mix the cheese, eggs, herbs and milk. Season the mixture with salt, pepper and ground nutmeg. Spread the sliced cheese over the dough, spread the onions over the cheese and pour the egg mixture over the cheese. 4. Bake the pie in a preheated oven at 200°C for about 40 minutes covered with foil. Then reduce the temperature to 180°C and bake for a further 15 minutes.
