Syracuse Fish Soup

Fish soup, from different types of fish, prepared in the oven.
Ingredients:
Procedure:
1. Clean fish, cut off heads and skin, bone
2. Pour one litre and two decilitres of water over the heads, skin and bones and boil for about half an hour
3. Cut the fish meat into small pieces, put in a pot
4. Add finely chopped onion and celery, parsley, crushed garlic, bay leaf, boiled, peeled and sliced tomatoes, oil, wine, salt, pepper and enough strained broth to make the ingredients just submerged
5. Cover with a tight-fitting lid and place in a hot oven for 40 minutes
6. Before serving, remove the bay leaf and top up with stock.
