Sweet Potato Fritters and Aura Dip
Crisp sweet potato fries can be made in the home oven. It takes a bit of work and gimmickry, but it’s certainly rewarding. Especially with aura cheese dip.
Ingredients for four
1 kg sweet potatoes 2 tablespoons olive oil

* Soaking the cheese and adding it back in sounds strange, but it works well.
Peel and slice the sweet potatoes into fries. At 1 cm x 0.5 cm thick, they crisp up well. Length 5 – 6 cm. Whatever size you make, try to get them as thick as possible so that they cook in the same amount of time.
Soak the sweet potatoes in cold water for an hour to remove the liquid from the surface. Dry thoroughly with a towel or paper towel. Rinsing and drying ensures a crispier roasting result. Put in a bag and olive jelly perään.
Stir the seasoning in a cup and pour into the bag. Shake well. Place the sweet potato fries on a baking tray on a baking paper, as loose as possible.
Bake the sweet potato fries in a 200°C oven for 30-40 minutes, until the fries are starting to get very crispy and the surface is crunchy. Cook in half an oven. REMEMBER THAT THERE ARE DIFFERENCES.
Mix the sun-dried cauliflower cheese with the French cream and serve as a dip.
