Sweet cannoli

Tubes fried in hot oil, after cooling filled with sweet cream.
Ingredients:
Procedure:
1. Sift the flour with the cocoa and stir in the coffee and caster sugar, then add the softened butter and dry wine and make a smooth dough, which you wrap in cling film and leave in the fridge for 1 hour
2. Roll out the dough on a floured rolling pin into a rectangular sheet, cut into 8 squares, which you roll into tubes on a creme fraiche lightly coated with oil so that the ends join and can be pressed well
3. In a pan in a higher layer of heated oil (it must not smoke), fry the tubes on all sides until crispy and let cool
4. For the cream, beat the ricotta with the icing sugar and vanilla sugar, stir in the finely grated orange zest and the whipped cream until stiff
