Swedish Stuffed Baked Potatoes

The stuffed potatoes have a spicy taste. The recipe comes from Scandinavian cuisine, how else than using fish – in this case, herring.

Ingredients:

12 pcs of larger potatoes 2 pcs of onions 1 pk of yolk 300 g of herring slices 4 tablespoons sweet cream chives butter pepper

Procedure:

1. Boil the potatoes in their skins until semi-soft, drain and let cool
2. Peel the potatoes, cut them slightly so that they stand, hollow them out with a round pruner or hollow them out with a coffee spoon, the sides and bottom must not be broken
3. Lightly fry the chopped onion in butter
5. Mix the minced potatoes with the herrings, fried onions, add the cream, egg yolk, pepper and mix thoroughly
6. Fill the stuffing with the hollowed out potatoes, place in a buttered baking dish or on a baking sheet and bake in a preheated oven for 20 –
25 minutes, depending on the size of the potatoes
