Sushi rice

Finnish porridge is also good for making sushi. The preparation process and the rice vinegar are the most important ones.

8 dl of prepared rice for about 6 rolls

5 dl rice 8 dl water 1/2 dl rice vinegar (sushi sauce) 2 tbsp cane sugar* 1 tsp salt

Open a sieve and measure 5 dl rice into it. Rinse the rice in cold water for a couple of minutes. Put the rice in a saucepan and add 8 dl of cold water. Let it absorb.

Bring rice vinegar, salt and cane sugar to a boil. Cook in the fridge quickly.

Let the rice stand in the pan for 15 minutes, then turn the heat on and cover the pan. As soon as the water starts to boil, you can turn the power down. Let the rice boil for a few minutes and then turn off the heat completely. Leave to simmer under the lid for 10 minutes. When ready, remove the rice to a shallow bowl and use a lid to remove any excess moisture from the rice.

Add the vinegar mixture to the rice and gently stir to combine. The end result is sticky and shaped like rice porridge.
