Šurpa

Recipe originally from Uzbekistan for a soup made of boiled beef diced into cubes, onions, potatoes, carrots, bone broth, tomato juice, butter and spices.

Ingredients:

300 g of beef

300 g of potatoes 1 pc onions 1 pc carrots 1,5 l bone stock 1,5 l tr>

2 tbsp tomato juice 1 tbsp butter ground sweet paprika pepper salt

Procedure:

1. Rinse the beef, put it in a pot, pour the broth from the bones and cook over low heat until the beef is tender
2. In the meantime, peel the onion, carrot and potatoes, cut the onion and carrot into smaller cubes, slice the potatoes, put the sliced potatoes in a bowl of water so they don’t blacken
3. When the meat is soft, cut it into smaller pieces and fry it together with the onion in a pot with melted butter for 5 minutes, then add the carrots, pour the strained broth and cook for 10 minutes
4. Then add the drained potato slices, tomato juice and cook until the potatoes are soft
5. Then season the soup with salt, pepper, a pinch of ground sweet paprika and serve.
