Super quick muffins with strawberries and delicious blueberry cream

Perfect choice if you don’t have much time and want to please children or adults. A fresh, simple muffin recipe is complemented by a fantastic cream that can also be used on its own or on pancakes.

First, beat the eggs and sugar until foamy, then add the oil and milk.

Stir and add the bulk ingredients – flour, sugar, baking powder. You can use extract instead of vanilla sugar.

Grease the muffin tin with baking spray or line with baskets. Place strawberries on the bottom and pour batter over about 3/4 of the muffin cups.

Place the muffins in an oven preheated to 180 degrees Celsius. They should be done in 12 minutes – check. This amount of batter will make 24 muffins, but make one large maxi muffin instead of a second baking sheet, like we did.

While they are cooling prepare the cream. Whip the mascarpone with the whipped cream.

Add blueberries or blueberry juice, which will give the cream an interesting color. Of course, you can also colour it with other natural colours.

Decorate the cooled muffins with the cream and serve. Enjoy!
