Summer salad with lentils and egg with mustard-honey dressing
ingredients
200 g salad mix 2 pcs tomato 1 can lentils steamed 20 g parmesan shavings 2 pcs soft-boiled egg pcs pine nuts
Dressing:
1 tbsp olive oil 1 tsp honey 1 tsp mustard pk salt pk black pepper pk lemon juice

This quick salad is deliciously filling not only on summer days.
1.
In a large bowl, add the salad mix, chop the tomatoes and add them to the salad.

Add the steamed lentils from the can, shavings of parmesan cheese and toss everything together.

Take a quantity of lettuce per serving in a bowl and add a poached soft-boiled egg and sprinkle with chopped nuts.
4.
Prepare mustard-honey dressing – put oil, honey, mustard, salt and pepper to taste in a bowl. Drizzle with the juice of half a lemon. Mix everything together to combine the flavours.
5.
Pour the dressing over the salad and serve.
