Summer herring salad
Last Updated on
The perfect herring salad is made with fresh vegetables and a fresh dressing. If you want to, you can marinate the herring yourself, but the herring in the shops are fine too.
Ingredients for four
onion herbs; a few new potatoes 1 pint of summer squash, the yellow one has been peeled 1 pint of chopped pumpkin, the yellow one has been peeled.4 eggs 2 onions
Salad dressing
1 lime juice 1/2 tsp mustard 2 tbsp olive oil 1 tbsp dill syrup
Bring the potatoes to the boil. When they have been boiling for ten minutes, put the eggs in the same pan.
Stir in the salad dressing until it’s done.
Skin and dice the summer squash. Peel my cucumber and scrape off the watery core with a spoon. Dice to the same size as the pumpkin.
When the potatoes and eggs are cooked, place them in cold water for a few minutes. After that, place the potatoes on a paper towel to dry and remove the shells from the eggs.
Place the ingredients on the plates in a neat arrangement, with a few slices of onion dill for flavour. Garnish with dill and chopped onion.
