I confess that at home pancakes are not only eaten at breakfast time, because more than once they have also been the protagonists of a delicious snack-dinner. I also like to try new recipes and experiment to try to come up with versions as healthy as possible, trying to avoid fats and sugars and incorporating fruits and other healthy ingredients as in this recipe that we propose today of oatmeal and banana pancakes.
Ingredients
Oat flour or oat flakes very crushed, 100 g Eggs, 2 large ripe bananas, 2 Royal type chemical impeller, 1/2 sachet Oil, a few drops to grease the pan Cinnamon and/or agave syrup, to serve (optional)
Step 1
In a bowl put the eggs and, peeled and chopped bananas. Mash everything well with the mixer until you get a homogeneous mixture. In another bowl we mix the oat flour with the chemical impeller. Finally, sift the flour mixture over the egg and banana mixture and mix with the whisk until you have a homogeneous mixture.
Step 2
Heat a griddle or frying pan over medium-high heat and grease it if it is not completely non-stick. When it is hot, we add spoonfuls of the mixture and, when we see that they start to bubble, we turn them over with a spatula and leave them for about a minute on the other side.
Step 3
As they are ready, we stack them on a plate to keep them warm.
Serve immediately.
Notes
As you can see they do not have any added sugar because the ripe banana makes them taste sweet. Even so, if you have a sweet tooth, you can sprinkle a little cinnamon over the top if you like or drizzle a little agave syrup over them when serving them.
