Sugar cookie recipe using round cookie cutter
Sugar cookies are a holiday staple, and this recipe is perfect for using with a round cookie cutter. The dough comes together quickly and easily, and the resulting cookies are both delicious and beautiful. Be sure to use plenty of flour when rolling out the dough, to prevent sticking. You can decorate the cookies with any type of icing or sprinkles you like. This recipe makes approximately 24 cookies.
Ingredients:
1 cup (2 sticks) unsalted butter, at room temperature
1 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
Instructions:
Preheat oven to 350 degrees F (180 degrees C).
In the bowl of your electric mixer, beat the butter on medium speed until creamy.
Add the sugar, and beat until light and fluffy.
Add the eggs, one at a time, beating well after each addition. Add the vanilla and mix until combined.
In a separate bowl, whisk together the flour, baking powder, and salt.
With the mixer on low speed, gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Turn the dough out onto a well-floured surface, and knead briefly. Wrap in plastic wrap and refrigerate for 30 minutes.
Note: If you’re in a hurry, you can roll the dough out immediately after mixing – just be aware that it will be a bit stickier and more difficult to work with.
Roll the dough out to 1/4 inch thickness. Use a round cookie cutter to cut out cookies, and place on a baking sheet lined with parchment paper.
Bake for 10-12 minutes, or until cookies are lightly golden brown. Remove from oven and let cool on a wire rack.
