Stuffed shrimps in crispy wonton batter

30 pcs wonton dough 24 pcs shrimps 400 g shrimp meat 2 pcs egg whites 1 cup cornflour 2 pcs beaten egg
procedure
1. Cut the wonton dough into small strips with a sharp knife. Place them on a plate and cover with a damp tea towel until needed. Clean the prawns, leaving the tails intact. Discard the heads. Using the tip of a sharp knife, pull out the dark vein. Cut a shallow hole in each prawn. 2. On a board, mix the prawn meat, the baby onions and the lard. Finely chop with a large sharp knife. Place the mixture in a bowl, add the egg whites, cornflour, salt and pepper. Mix everything with your fingers. 3. Using a knife, insert 1 teaspoon of the mixture into the hole of each prawn, trying to fit as much as possible. With wet hands, press the remaining mixture into the prawns. Then roll them in the remaining cornflour, carefully dip them in the beaten eggs and mix with the wonton, pressing down firmly. Roast the prawns for 4 minutes and serve.
