Stuffed Quail

Crusted quails filled with stuffing, wrapped in pork diaphragm and baked until golden brown.
Ingredients:
Procedure:
1. Sliced mushrooms fry in hot oil
2. Chop the smoked also finely and add to the other ingredients, mix everything with eggs, salt, pepper and mace, adjust the density of the stuffing with coarse flour
4. Spread the prepared stuffing over the boned quails, wrap each one with a part of the membrane (it holds everything together and the whole thing bakes up beautifully)
5. Bake in a preheated oven at 160-170 °C for about 40-45 minutes.
