Stuffed Okra

Recipe from West India for fried stuffed okra pods. Stuffed okra is easy to prepare and very suitable as a side dish for meat dishes, especially poultry.

Ingredients:

Rule for 4-6 servings: 225 g large okra (edible hibiscus) pods 2 tbsp cornstarch 1 tablespoon of amchur (mango powder) 1/2 tsp ground Roman cumin 1/2 tsp ground ginger 1/2 tsp ground turmeric 1/2 tsp ground chilli vegetable oil salt

Procedure:

1. Wash the okra, drain well, cut off the ends, make deep incisions in the pods
2. In a bowl mix amchur, ginger, cumin, chilli and turmeric with salt, a few drops of oil
3. Let the mixture rest in the fridge for 1-2 hours
4. Carefully open the slits of each pod and stuff as much of the spice mixture as possible
5. Put the pods in a bag with cornstarch and shake them gently to coat them evenly
6. In a wok or karahi filled with hot oil, fry the pods, in batches, until they turn golden brown and crisp.

Recommendation:

Serve this prepared okra preferably with any meat or fish curry.

Note:

Amchur: In Indian cuisine, it is an acidic powder made from dried unripe mangoes, rich in vitamin C. It adds a sour taste to the food.
