1 kg strawberries 800 g Crystal sugar 2 tsp citric acid

Quick and proven.

Wash the strawberries and blend with a stick blender to leave the strawberry chunks.

Cook for about 30 minutes.

Add sugar.

And simmer together for about another 20 minutes. It depends what kind of pot you use – a wider pot is more likely to cook than a narrow one

Add the citric acid

Stir and simmer for a little longer, depending on how thick you want it to be.
7.
Fill into clean glasses, shake while still hot and you’re done.
8.
I cook it by eye sometimes it needs to cook longer depending on the strawberries.
