Strawberry craze (couscous salad with strawberries)

1/4 cup olive oil 2 tbsp lemon juice 2 tbsp granulated sugar 1 tbsp Dijon mustard 2 drops almond flavouring 4 cups beef stock 300 g pasta Couscous 1 tbsp butter 100 g fresh baby spinach 500 g fruit – fresh strawberries 200 g Feta cheese 1/3 cup walnuts salt, ground black pepper
procedure

In a small saucepan, heat 1/4 cup olive oil, 2 tablespoons lemon juice, 2 tablespoons granulated sugar and 1 tablespoon Dijon mustard. Stir until the sugar dissolves, then stir in 2 drops of almond flavoring and set the mixture aside.

Bring 4 cups beef broth to a boil (chicken or vegetable broth can also be used). Add 300 g of Couscous pasta, 1 tablespoon of butter, set aside and let cool. Salt and pepper the couscous that is soaked in the broth.

In a large bowl, mix 100 grams of baby spinach, 500 grams of chopped fruit – strawberries, 200 grams of Feta cheese and 1/3 cup of walnuts. Add the couscous and finally stir in the dressing. Season with salt and pepper.
