Stitch Pudding

Mixture of pike meat, mushrooms, eggs, cream, peas …. cooked in a water bath.
Ingredients:
Procedure:
1. Remove the skin from the pike, remove the bones and mince the meat finely
2. Make a light roux with butter and plain flour, dilute it with milk, whisk it and boil it into a thick béchamel
3. Stir in the minced pike meat, egg yolks, mace, salt and cream
4. Finally, add the peas, diced mushrooms, lemon juice, stiff egg white snow and mix lightly
5. Put the batter into a greased and breadcrumb-lined pudding mould (fill it only three-quarters full), cover with a greased lid and cook in a water bath for 50 minutes

Recommendation:
– Garnish: Tomato sauce.
