Stir-fried Chinese noodles with chicken and Vegetable Recipes recipe

In Spain we know them as fideos and we are used to eating them small and, almost always, in soup. In fact, our Spanish version most similar to today’s recipe is the dry fideuá that is made in some localities of the Levantine coast.
Although noodles are defended as something very much ours and the Italians do the same with their “spaghetti”, the truth is that they all have a common denominator: the China of more than 4000 years ago. Yes, as you hear it, all noodles come from China, where they were made thousands of years ago from millet.
From then on, the secret art of making noodles (or noodles) was shared with the rest of the world and they began to be made from wheat, egg, rice or a mixture of all of them, depending on the ingredients at hand.
In short, noodles or Chinese noodles, are the typical oriental noodles that can be found in a thousand and one different preparations, as they have managed to impose, along with rice, as the most consumed and globalized Asian food. Rare is the day when a Chinese does not eat noodles.
Chinese noodles come to be to Spain what rice with stuff. What fits in a rice? Anything that we have hanging around in the fridge and do not know very well what to do with it. Mer Bonilla already said it in this recipe of noodles three delights: “throw to the wok everything you find”. And everything has a place in good noodles. They can be sautéed, made into soup, in a roll or however you like.
How to make fried Chinese noodles with chicken
Ingredients
. Dried egg noodles, 250 g Large spring onion, 1 pc Yellow bell pepper, 1/2 pc Chicken breast, 200 g Garlic cloves, 2 pc Fresh ginger, 2 cm Zucchini, 1/4 Mild olive oil, 2 tbsp Salt, tsp/s Black pepper, tsp/s
For the sauce
Sesame oil, 1 tablespoon Soy sauce, 3 tablespoons Oyster sauce, 1 tablespoon Chinese red vinegar, 1 tablespoon Honey, 1 teaspoon
In this case we have chosen to make some Chinese noodles sautéed with chicken that well solve us a dinner in which we have little desire to tangle in the kitchen. It’s a matter of lying on the couch with a good bowl of noodles, tuck yourself in with a blanket and watch the series of the day.
Step 1
The first thing to prepare is the chicken, we can use chicken breast or thighs, cut it into bite-sized pieces and, if we want, marinate it lightly in soy for 1 hour in the fridge. We can also sauté it directly.
Step 2
In a frying pan over very high heat, sauté the chicken with a tablespoon of oil so that it browns on the outside quickly sealing in the juices. It is important that the pan is very very hot.
Step 3
Cut the spring onion into julienne strips reserving the green part, which we will also chop very fine to finish the dish as if it were the Chinese spring onion and so we do not need more ingredients. Chop also the bell pepper in fine julienne.
Step 4
In the same pan as the chicken, without cleaning it, sauté the Vegetable Recipes over high heat with the garlic cloves and ginger chopped into large pieces (note that these are not eaten later, they can also be removed).
Step 5
Cut the zucchini into discs and then into julienne strips as well. Add to the sauté and stir everything over high heat, animated, if it is in a wok much better. The Vegetable Recipes should not be poached, they should be sautéed.
Step 6
Cook the noodles 2 minutes in boiling salted water, drain and cool very quickly.
Step 7
Mix all the sauce ingredients and set aside.
Step 8
Add the chicken to the Vegetable Recipes, stir well and add the noodles, sauté for half a minute and add the sauce, mixing everything well. Just a couple of minutes. Serve, finishing on top with the green part of the spring onion to give it freshness.
