Stifado

Great recipe for beef. It comes from Greek cuisine. It is cubes of beef back stewed together with tomatoes and other ingredients until tender.

Ingredients:

500-600 g of beef butt 500 g onion 250 g peeled and chopped tomatoes 4 tbsp of tomato puree 10 pcs cloves of garlic 2 pcs of garlic cloves 2 pcs of bean leaves olive oil rosemary pepper salt

Procedure:

  • Cut the meat into larger cubes, dice the onion, slice the garlic
  • In a saucepan, heat the oil, add the onion, lightly fry the meat
  • .Add tomatoes, garlic, purée, bay leaf, rosemary, salt, pepper, pour water to immerse everything, cover with a lid and simmer on low heat for 2-2.5 hours, some of the water will evaporate and thick juice will remain.
