Štědrák
This stacked cake regularly appeared on the tables of our grandmothers and great-grandmothers at Christmas time.
Ingredients:
Procedure:
1. First prepare the leaven, make a well in the flour, crumble the yeast into it and pour in a little lukewarm milk, once the leaven has risen, add the other ingredients and knead a semi-solid dough, leave this to rise in a warm place covered with a clean cloth
2. After rising, divide the dough into 5 equal parts, roll out the loaves on a floured work surface into 4 rounds about a finger thick (keep one part of the dough for decoration)
3. Place the first round on the baking sheet, spread it with jam, cover it with the second slice, spread it with nut filling, the third slice with poppy seeds, and the fourth slice with cottage cheese
4. On top of this folded cake, make thin lattices from the remaining dough or decorate the edges of the cake with braid
5. Bake in a preheated oven at 180 °C for about 50 minutes.
Prepare the nut filling:
Mix 180 g of ground nuts with 2 dcl milk, 30 g of breadcrumbs, 1 bag of vanilla sugar, 80 g of icing sugar and the lemon zest of 1/
2 lemons.
For the poppy seed filling:
Mix about 200 g of ground poppy seeds together with 2 dcl milk, 120 g of icing sugar, 10 g of softened butter, 10 g of vanilla sugar and the lemon zest of 1/
2 lemons.
Prepare the curd filling:
mix 200 g of curd with 80 g of slightly loosened butter, 80 g of icing sugar, 30 g of raisins, 2 egg yolks, 2 beaten egg whites (snow), a bag of vanilla sugar and again the lemon zest of 1/
2 lemons.
Recommendation:
The layers of the cake can of course be changed as you wish!
