Steamed salmon with pea cream

400 g fresh salmon fillet 200 ml water pcs salt pcs ground black pepper 2 lemon 3 sprigs fresh thyme pcs oil spray

2 sliced butter 1/2 pk onion 40 g leek pk salt pk sugar 1 sprig fresh thyme 200 g frozen peas 400 ml vegetable stock 100 ml cooking cream

Salmon can be prepared in many ways, one of which we offer you.

First, make the pea cream – sauté finely chopped onion in butter along with the leeks. Add the frozen peas, which we salt and pepper. Stir. Pour in the stock, throw in a sprig of fresh thyme and the cooking cream. Cook for 8 minutes (briefly, so that the peas retain their beautiful green colour). Finally, blend everything with an immersion blender until smooth and creamy.

Steaming the salmon – In a large saucepan, bring the water to the boil along with a slice of lemon and sprigs of fresh thyme. Add a wire rack on which to place the steamer. Spray the latter with oil spray. In the meantime, prepare two slices of salmon and season with salt and pepper. Place on the steaming grid and seal. Steam for 8 minutes.

Serve so that you can garnish with a quarter of a lemon and possibly whole peas that have been briefly sautéed in butter.
