I got this recipe from my grandmother. It’s the softest and best cake in the world. As a bundt cake, it is suitable for every day or when filled, it is also suitable for a more festive occasion.
1.
Separate the egg whites from the yolks. Whip the egg whites into stiff snow.
2.
Whisk the egg yolks with the icing sugar. Add water and oil.
3.
Pour boiling water over the raisins and allow to swell.
4.
Add the flour, baking powder, raisins and stiff snow to the egg yolk mixture.
5.
Remove the crumbs from the batter and stir in the cocoa.
6.
Pour the pale batter into the silicone mould and then the dark batter.
7.
Place in a preheated oven at 180 degrees Celsius for 1 hour (depending on the oven). You can tell if the cake is baked by sticking a skewer into the cake and when you pull it out it will be clean, without batter.
8.
For a festive version, whip 1 mascarpone, 1 whipped cream and sugar to taste. Cut the cake 2 times and fill with cream.
9.
Good taste 🙂
