Spring Risotto

Inspiration for the use of asparagus in the kitchen from the popular cheese factory La Formaggeria Gran Moravia. It is a recipe from Italy. Get inspired and enjoy a real Italian risotto at home.

Ingredients:

500 g of arborio rice from La Formaggeria Gran Moravia 500 g shelled fresh peas 100 g Gran Moravia cheese 1.5 l chicken stock 2 dcl white wine 1 bunch asparagus 1 bunch of carrots 1 piece finely chopped shallots extra virgin olive oil juice of 1 lemon pepper to taste salt

Procedure:

Salt and pepper the Vegetable Recipes. Cook the peas briefly over steam. Slice the carrots lengthwise and cook until semi-soft. Peel the asparagus and cook over steam. The Vegetable Recipes must remain crisp.

In a saucepan, fry the shallots and rice in olive oil. After a few minutes, add salt and pepper. Pour in the white wine and let it evaporate. Gradually add the broth, but always until the liquid is completely absorbed. Keep stirring the risotto. In about 20 minutes the rice will be ready.

Remove from the heat, drizzle with lemon juice and stir in the cheese. Season with salt and pepper as needed.

Serve hot garnished with Vegetable Recipes.
