Spring Egg Nests

Leaf dough pre-baked in moulds weighed down with beans, bowls filled with sausage, cheese and possibly Vegetable Recipes, baked in the oven until the egg is set, served as a warm starter.

Procedure:
1. Roll out the dough on a floured work surface, cut out circles and place them in the holes of the muffin tin lined with baking paper, weigh the dough down with beans so that it does not rise during baking but remains nicely shaped into little bowls
2. Bake for 9-10 minutes in a preheated oven at 180 °C, then turn the beans out
3. Whisk the egg yolk with milk, brush the egg yolk on the puffs, bake for another 5 minutes
4. Line the bowls with slices of ham or other sausage, pieces of Vegetable Recipes, grated cheese, finally carefully crack one egg into each bowl
5. Season with salt and ground red pepper and bake in the oven for 10-15 minutes, until the egg whites have set nicely, the yolks should remain slightly runny
6. Serve the nests warm, sprinkled with chopped herbs.
