To make this sponge cake, which can be any flavor you want, it is true that you only have to mix two ingredients, but obviously there is a trick to it. Many cakes have dairy, fat, sugar and eggs, and to make this one we are going to use an ingredient that is a mixture of all those just mentioned. I’m talking about ice cream, because mixing that ice cream that we left out of the fridge and that we should not refreeze with flour bizcochona we can make a cake the sea of resultón.
Ingredients
Biscuit flour, 200 g Milk-based ice cream, 500 g
(*) If you do not have biscuit flour, also called leavening flour, you can replace it with 200 g of normal flour and 10 g of chemical baking powder (Royal baking powder).
(**) It must be dairy-based ice cream, not sorbets or ice creams. The amounts in this recipe are the weight and it takes 500 g of ice cream, look carefully do not go to use a tub of 500 ml, thinking it is the same, because the difference in quantity is very large.
Step 1
Remove the ice cream from the freezer and leave it on the counter in a warm area. Turn on the oven at 180ºC to preheat it. Line a baking pan with baking paper and set aside.
Step 2
When the oven is at the desired temperature and the ice cream is like a cream – if the oven heats very fast and the ice cream has barely thawed we can put it in the microwave for a few seconds-.
Pour the ice cream in a bowl, add the sponge flour, mix well with the help of a hand whisk and pour the mixture into the mold that we have lined with baking paper.
Step 3
Bake at 180ºC for 35-40 minutes, until a toothpick comes out clean. At that time, remove the cake from the oven, let it cool for 10 minutes in the mold, unmold and let cool on a wire rack.
Notes
This cake can be served as is or we can decorate it before serving. The ingredients we choose for the decoration must be in accordance with the flavor of the ice cream we have used to prepare it.
