Spiš potato pierogi

ingredients

1 kg semi-coarse flour 2 pcs egg 200 ml lukewarm water 1 pinch salt 1 kg potato 250 g bryndza 4 tbsp spring onion

1. Peel the potatoes, cut into cubes and boil. Drain and mash. Take two handfuls of the potatoes to make a batter and chop the spring onions and add the bryndza to the remaining potatoes. 2. Prepare the dough from the flour and make a well in the dough. Add the mashed potatoes, eggs, water and a pinch of salt. Make a smooth dough, knead it properly and divide it into three equal parts. 3. Roll out the first part of the dough on a floured board. Using a rolling pin, cut out rounds of dough. Place a teaspoon of filling in the centre of each round, fold over the edges and use your hands or a fork to bring the ends together. 4. Cook the prepared pierogi in salted boiling water. They are cooked when they float on the surface. Serve the finished pierogi with bacon and sour cream.
