Spinach with toast

Simplified spinach served with fried egg toast and eggs.

Ingredients:

1 kg of spinach 150 g of seeds 40 g of butter 20 g smooth flour 4 dl milk 1 pc egg nutmeg sugar pinch milk salt fat for browning egg for garnish

Procedure:

1. Pour boiling water over the cleaned spinach leaves, boil them vigorously (under a lid), drain them and press them through
2. Make a light roux with butter and flour, dilute with milk, boil well and add spinach
3. Salt, slightly sweeten, season and let it boil
4. Cut the bread rolls into thin slices, soak them in milk beaten with egg and a pinch of sugar, fry on both sides in hot fat
5. Arrange the spinach on a plate, garnish with poached eggs and toast.
